Mix chicken, seasoning and ¼ cup sauce in a medium bowl. Set aside for 10 minutes to marinate. Place breadcrumbs in a shallow bowl. Dip chicken in breadcrumbs and turn to coat evenly.
Place chicken in an air-fryer basket. Spray with oil. Air fry at 200°C for 15 minutes or until cooked through and golden.
Mix mayonnaise and remaining sauce in a bowl. Top bun bases with lettuce, beetroot, chicken and cheddar. Drizzle with buffalo mayonnaise. Top with bun lids. Serve.
