Cook the chicken burger patties in the oven or air fryer as per packet instructions.
While the chicken is cooking, make the guac by adding the avocado, jalapeño brine, jalapeños, coriander, lime juice and salt to a bowl and mash with a fork. Fold through the capsicum and red onion.
Lightly toast the buns then assemble the burgers. Spread a generous spoonful of salsa over the bottom buns, then place a chicken burger patty on top, a slice of cheese, and pile on the guac and corn chips. Spread the top buns with more salsa and sandwich on top. Dig in!
