Place mango, sugar, jalapeño and 1½ cups water in a saucepan over medium-low heat. Cook, stirring for 5 minutes or until the sugar has dissolved.
Increase heat to high and bring mango mixture to a boil. Reduce heat to low and simmer for 20 minutes or until slightly thickened. Allow to cool. Remove jalapeño and reserve. Juice 1 lime and add to mango mixture. Transfer to a food processor and process until smooth. Pour into a sterilised glass bottle or jar. Return jalapeño, if desired (see tip). Store in the fridge until ready to serve.
Place salt and chilli powder on a small plate. Crush together with the back of a teaspoon. Cut remaining lime into slices. Run a lime slice around the rim of each serving glass, then gently press into the chilli mixture to lightly coat. Half fill the glasses with ice. Pour about 2 tbs of cordial mixture into each glass, then top up with soda water. Serve topped with a mint sprig and lime slices.
