Cut 2 small slices from unpeeled pineapple and reserve to garnish glasses. Peel, core and chop remaining pineapple.
Process pineapple, mango and juice until almost smooth.
Place egg white in a shallow bowl. Zest 1 lime, then cut into wedges. Thinly slice remaining lime. Using a mortar and pestle, pound sugar, chilli and lime zest until combined. Transfer to a plate.
Dip rims of 2 glasses in egg white, then chilli sugar mixture to coat. Pour mango mixture into glasses. Thread pineapple and lime slices onto skewers. Serve mocktail with fruit skewers and lime wedges.
