Heat curry according to packet instructions. Meanwhile, heat 1 tbs vegetable oil in a wok over high heat. Stir-fry veggies for 2 minutes.
Add curry to vegetables and stir to combine.
Add coconut milk and stir over medium-high heat for 4 minutes or until vegetables are tender.
Meanwhile, cook noodles according to packet instructions. Drain. Divide noodles among bowls and top with curry.
