Preheat oven to 200°C/180°C fan-forced. Grease and line a baking tray with baking paper. Cut each burger in half. Roll each half into a ball, then flatten to a 14cm disc to make 8 patties.
Spray patties with oil. Heat a large non-stick frying pan over medium-high heat. Add 2 patties to pan. Using a spatula, press to flatten. Cook for 1-2 minutes or until browned underneath. Turn. Top with a tortilla and cook for a further 1-2 minutes or until browned. Turn and cook for a further 1 minute or until tortilla is golden. Transfer, tortilla-side down, to a chopping board. Repeat with remaining patties and tortillas.
Prepare coleslaw kit following packet instructions. Top patties with 1 tbs cheese, coleslaw, then 1 tbs cheese. Fold in half and place on prepared tray. Spray with oil.
Top tortillas with remaining cheese. Bake for 10 minutes or until golden brown. Sprinkle with coriander. Serve with lime if using.
