Combine peanut butter, soy sauce, coconut milk, garlic, and 2 flavour sachets from noodle packets in a large, heavy-based frying pan. Cook, stirring, over medium heat for 2 minutes or until smooth and combined.
Top with noodles. Pour over 2 cups boiling water. Bring to a simmer. Simmer, partially covered, for 2 minutes or until noodles are tender. Stir to combine.
Divide noodle mixture among serving bowls. Drizzle with chilli oil and sprinkle with onion. Serve.
