Heat 1 tbs oil in a large frying pan over medium-high heat. Add onion and garlic. Cook, stirring, for 6 minutes or until beginning to soften. Add glaze. Cook, stirring, for 3-4 minutes or until caramelised. Transfer to a bowl.
Cook pasta following packet instructions. Drain, reserving 1/3 cup cooking liquid.
Meanwhile, add remaining oil to the frying pan. Add mushrooms and cook, stirring, for 4-5 minutes or until browned and tender. Add cream and bring to a boil.
Add pasta and reserved cooking liquid to cream and toss to combine. Add onion mixture and stir to combine. Top with parmesan, thyme and pine nuts. Season with freshly ground black pepper and serve.
