In a large bowl, combine mince and seasoning. Working with 1 tortilla at a time, spread with ¼ cup mince, leaving a 1cm border.
Lightly spray with oil. Heat a large frying pan over medium heat. Carefully place 1 tortilla in pan, meat-side down.
Cook tortilla for 3 minutes or until charred and patty is cooked through. Working quickly, flip tortilla over in pan. Remove tortilla from pan and keep warm. Repeat with oil, remaining tortillas and remaining mince. Top with cheese and onion. Drizzle with sauce. Serve topped with coriander.
