Preheat an air-fryer to 180°C for 5 minutes. Add schnitzels and cook for 20 minutes, turning halfway.
Combine yoghurt, lemon juice, honey and mustard in a large bowl. Whisk until combined. Add coleslaw, orange and parsley, and toss until dressing is mixed through.
Cut remaining lemon into wedges. Serve schnitzel with slaw and lemon.
