Preheat oven to 200℃/180℃ fan-forced. Cook pasta according to packet instructions. Drain.
Meanwhile, heat oil in a large frying pan over medium heat. Cook chicken for 5 minutes, stirring, or until browned. Add mushrooms and onion, then cook for a further 5 minutes, stirring, or until golden.
Stir in stroganoff base and 1½ cups cold water. Simmer for 2 minutes or until thickened slightly. Add sour cream and half of the parsley. Stir for 1 minute or until combined. Add pasta and stir until well combined. Transfer to a 22 x 32cm baking dish. Top with cheese and bake for 15 minutes or until golden.
Scatter over remaining parsley. Serve seasoned with pepper.
