Dissolve coffee in a small bowl with 2 tsp boiling water. Set aside to cool.
Place mascarpone, cream, icing sugar and cold coffee mixture in a large bowl. Whisk until soft peaks form (don’t overmix or the mixture may split). Spoon mixture into a large resealable bag. Snip off one corner.
Pipe mascarpone mixture over doughnuts. Dust with cocoa. Serve.
