Roughly chop 1 mango (you’ll need 200g mango flesh). Place chopped mango in a food processor and process until smooth. Transfer to a large microwave-safe bowl. Add sugar, eggs and lemon juice. Whisk to combine.
Add butter. Microwave on high for 6 minutes, whisking every 30 seconds, or until mixture is smooth and thick. Strain. Allow to cool.
Cut remaining mango into cubes. Cut each sponge roll into 4 pieces. Divide sponge among serving glasses. Spoon over cooled curd. Add a dollop of cream. Top with mango, raspberries and pistachios. Serve.
