Cut chicken in half. Place in a large bowl with 2 tbs satay sauce and oil. Mix well. Transfer to the basket of a 5L air fryer. Cook at 200°C for 10 minutes, or until cooked through and golden brown. Transfer remaining satay sauce to a small bowl. Add 2 tbs warm water and mix well.
Meanwhile, thinly slice onion. Place onion and vinegar in a small bowl. Mix well. Stand for 10 minutes. Drain.
To make the peanut crunch, finely chop chilli. Combine chilli, nuts and shallots in a small bowl.
Using a vegetable peeler, slice cucumber into long ribbons. Slice chicken. Place rice in serving bowls. Top with chicken, cucumber and pickled onion. Sprinkle with peanut crunch and coriander. Serve with remaining satay sauce.
